I've been practising making scones! There is a reason for this, my scone making is not renowned and hubby and I decided to invite some family and friends around for a fund raising cream tea :-). As a thank you to the Haematology Centre where I recently had treatment, we want to raise some money for them to buy extra equipment etc.
I've been given a fool proof recipe by a friend, and this is a record of my renewed attempt,

Lemon Juice
- Sift the flour and salt into a bowl
- Rub in the butter finely
- Add the sugar and mix in
- Warm milk in microwave and add a squirt of lemon juice
- Add the milk all at once. Mix into a soft but not sticky dough with a knife
- Turn out onto a lightly floured board and knead quickly until smooth
- Roll out to about 1/2 inch thickness. Cut into rounds with fluted biscuit cutter.
- Transfer to a buttered/lined baking tray and brush with milk or egg
- Bake towards the top of hot oven (450 degrees/gas mark 8) for 7 - 10 minutes. Or until well risen and golden
- Cool on a wire rack
Various ingredients can be added, ie sultanas, glacé cherries, crystallised ginger, (add at stage 3 with sugar)
Cinnamon - add 1 or 2 level teaspoons of cinnamon at stage 1 with flour and salt.
Serve with a pot of tea, strawberry jam or honey :-)
